Peach and Rose Champagne Bellini


This peachy pink bellini is simple, fresh and looks so pretty in a Champagne coupe glass. Great for summer brunches and lunches, it can be made with Champagne, sparkling white wine or prosecco.

Serves: 8-10

Bring the peaches, rose petals, sugar, lemon juice and water to boil for 5 minutes and leave to cool.

Pour into a blender, Vitamix or Thermomix and combine until thoroughly puréed.

Fill glasses 1/3 with peach juice and fill remaining with sparkling white wine.

Top with a matching pink rose petal.

Variations: Peaches can be replaced with other summer fruits such as rhubarb or raspberry. Red rose petals will give the juice a rich pink colour.
